The 'Easy Mix' enables you to cook fresh, authentic, delicious Indian snacks anytime. Specially selected spices have been hand blended with gram flour, which when added to vegetables creates a superb Eastern treat.
Serves: 12-15. Preparation time: 10 minutes. Cooking time: 5 minutes.
Prepare 500g of Raw vegetables we suggest a mixture from any of courgette, cauliflower, broccoli, button mushrooms, Parsnips, Aubergines, Spinach, or Sweet Potato.
Cut cauliflower & Broccoli to bite-size florets, thinly slice Parsnips, Aubergine or Sweet potato and leave Mushrooms whole.
Put the Bhajiman Pakora easy mix into a bowl and add 5 floz of water. Stir well and cover the bowl, leave for 10 mins for the herbs & spices to infuse.
Heat sufficient Vegetable, Corn or Sunflower oil. When oil is hot, dip the prepared raw vegetables in the batter and then shallow fry until golden brown. Finally drain well and serve hot with the following dips:
- Yoghurt mixed with finely chopped fresh mint leaves season with salt and pepper to taste
- Spiced Mango chutney
- Tomato Sauce sprinkled with Pan roasted Coriander and Cumin seeds 2:1 ratio
