The De Carlo family from Bitritto in Puglia have an impressive pedigree dating back five hundred years as millers of excellent olive oils and their oil is still winning awards. Their mill incorporates traditional milling with granite stone wheels, which they believe gives a greater range and subtlety in flavour to the oil produced from local olive varieties.
