Chanterelles are wild mushrooms and dried give a wonderful flavour and colour to sauces. The yellowish flesh has a lovely faint fragrance of apricots. Ideal in sauces with pasta, rice, soups, white meat, poultry, mushroom dishes, crepes, etc. Chanterelles work very well in a cream based sauce. Dried mushrooms should be soaked in warm water for about 20 minutes before being cooked. This water, once strained, can also be used as a mushroom stock for a more intense flavour. Cook the mushrooms thoroughly before eating.
