Pilau Rice Spice Mix, or Pilaf, is a traditional blend of whole and ground spices to make the Indian side dish pilau rice. Cinnamon and cardamom impart a sweet taste, whereas clove and cumin impart wonderful earthy notes to the dish. The colour of the rice is sunshine yellow due to the turmeric within the spice mix. A great quality of Pilau Rice is that every country has its own version, each being slightly different. Typically, the Indian versions contain extra ingredients such as raisins, sultanas and cashews. The dish is often served alongside a curry for lunch or dinner.
